I've played about a 1/2 dozen open mics at Flatlander's this year, and they get a pretty good mix of acoustic and rock acts. They have a decent P.A. and provide a drum kit. The host, Paddy, will loan out his guitar, if needed. Plus, $3 microbrews. Overall, it's a pretty good scene.
Rob (6/2008): Heard this is a good Monday night Jam. They also have under 21 open mic on Saturday afternoons from 1 to 4pm.
